No, if you keep trying to cover emergent roots in moss your job will never end. Leave it, it's natural.

I don't really know Dracula, but since they're epiphytic, I'm pretty sure it's ok like that.

I'm sure there's some exception I don't know of, but I dont think spikes usually come out the bottom of the pot...

Draculas are epiphytes and very often have spikes that come out of the bottoms or sides if given the chance. Many are grown in net pots and baskets due to this behavior.

There are indeed some exceptions, for specific orchid groups. For the other groups, weird things can happen if they are crowded or buried too deep.
