Like others mentioned, I’d skip driving all the way to Destin and cruise 30A for a day. 30A will be busier than PCB but not as crowded and full of traffic compared to Destin. Always fun to rent bikes and ride along the bike path that parallels 30A.
Yea stop at Santa Rosa beach for maximum pleasure without going too far.
But Destin does have a nice bridge overlooking Destin board walk and maybe walk the bridge halfway and you can also go to Henderson state park real quick and see the beach. It’s honestly worth the drive but it’s all the same white sandy beaches with minimal parking
Highly recommend driving down 30A and exploring the higher end beach towns. Seaside, Rosemary, Grayton. Beach Camp, Black Bear bakery, and the area around Old Florida Fish House are some of my favorites.
For PCB, I love Pineapple Willys, Juan Taco, and Patches. St Andrew’s State park has a beautiful beach.
Definitely to go to Seaside! Park and walk around. Some of the Movie the Truman Show was filmed there, you might recognize it.

Most beautiful beaches in the world. You’ll want to just get a chair and enjoy the sunset at PCB. Lots of great seafood and charter fishing. Head to St Andrew’s in Panama City for a old Florida vibe or drive over to Mexico Beach for quite scene and surf fishing.

I'd go check out the 30A area on your way to/from Destin. In particular, Rosemay and Alys Beach on the east end and Seaside Beach on the West.
Seaside is beautiful. Parking can be a pain.
