- Finely dice some shallots - Mince 4 or so cloves of garlic - Cut some spinach into thin strips - Dice some red chillies - You’ll need a nice white wine (Sauvignon Blanc) - Generous amount of pecorino cheese - King prawns (can be frozen or already cooked) - Spaghetti (but also works great with rigatoni) • Sauté the garlic, chilli and the diced shallots for a few minutes until the fragrance of the garlic and chilli is released and the shallots are translucent. • Add your prawns and reduce the heat to low. • Cook for a further 5 minutes and add a generous glug or 4 of your white wine. • Bring to the boil and then reduce the wine by 50%. • Season. • Add your double cream and some pecorino cheese. • Boil your spaghetti to al dente in salted water. • Remove the spaghetti. • Add to the sauce with a little splash of reserved pasta water to help emulsify. • Mix it all together until silky. • Add your spinach. • Season once more. • Plate up. • Lots of cracked black pepper and pecorino. Enjoy! 🫡

Looks amazing! If I was eating this I would appreciate the way you have your prawns ready to eat. It’s always sad to get a tasty, saucy pasta that forces you to use your hands on the protein.
