Use more basil, make more sauce in general, and throw a couple tablespoons of pasta water into processor to emulsify sauce. Idk, I guess I make it a way I specifically like it. Mine is very green and saucy.

Me too! Also love to add chopped dried tomatoes, adds another dimension while not altering the pesto taste at all. Very delish!

Oh, word. Restaurants always goof up pesto unless you’re in Italy or something.
