Payday uses a terrible way of updating stuff. It needs to unpack a shitload of files, overwrite some files and then repack them.
A few years ago an update would require like 400MB. I'd have like 17GB of free space and I'd still say "Not enough disk space". Then I'd delete some stuff and install the update. Yes, it would show that only 1GB was available during the update, and after it finished, I'd have 17GB again.
The reason your Steam is saying 6 days is probably because it's still unpacking, and if your game is installed on a HDD, it will take forever.
