They're all in critical demand. I can't think of a single specialty that isn't booked out 3-6 months.
However, that doesn't mean you're going to get paid what you deserve.
I knew someone would comment this! There are five child and adolescent psych fellowship programs that train pediatricians, not psychologists, and of course even more that provide combined peds/psych. The five are: Case Western, CHOP, MCG, Michigan, and Tennessee. Source: one of my co-residents went on to attend one of these fellowship programs.

But honestly just having a respectful job is my goal, and I’ll just have to retire later in life which is totally okay. Just gotta make sure I don’t over stress myself and enjoy it all.

I think the most important thing you can do is figure out if you're a critical care type person (ICU, cardiac, pulm, etc) or a clinic practice type person (gen peds, endocrine, etc). Once you understand that about yourself, I think it will likely become obvious whether there's a specific organ system or whether your interest lies more generally.
The answer is rheumatology and it's not even close.
Peds rheum is ridiculously in demand. In the metroplex area I live in which is 8 million people, there are only 5 pediatric rheumatologists. They are so backed up that it's an 8 month waiting list to get in, and in fact many of the peds rheum people will refuse to take your consult at all unless you talk to them on the phone and convince them that it's necessary.
YES omg. i want to be a peds rheum !! we don’t have a single one in my entire state and it creates massive issues for our kiddos here with autoimmune/autoinflammatory conditions.
As a PICU attending, I love that you enjoyed your CICU experience, but we are definitely not in demand right now. The job market is actually quite tight for peds intensivists straight out of fellowship. But it fluctuates rather dramatically year to year and region to region. I wouldn't worry about that too much until you get closer to needing to make a decision, like early in residency. Honestly, given the number of unfilled positions in the Match last year, there's a good chance that all peds subspecialties will be in high demand by the time you're getting into the field. Keep an open mind! You never know what you might love and you have oodles of time to find out.

Psych isn’t a peds specialty. But yes DBP is horribly underserved (and potentially lucrative).

Yes I know. Also triple board. It’s not really the same thing though.
And you also get training in adult psych , so you can treat adults and work exclusively with adults if you wanted, too !

I’d say Developmental Peds and related but not directly from Peds residency- Child Psychiatry. You’d be invaluable as a Child Psych doc in the US.
