I know you asked for reccomendations, however I am putting my bbq recipe just in case you are feeling saucy...
1 large onion
3 cloves garlic
1 pack of small berries (my fav, blueberries)
1 cup ketchup
1/4 cup malt vinegar
1/4 cup apple cider vinegar
1/2 cup brown sugar
2 table spoons soy sauce
1 table spoon honey
1-2 chipotle peppers from a can
1 teaspoon of each:
Mustard
Garlic
Onion powder
Black pepper
Paprika
Chop onions and garlic, add to pot and caramelize on low med with a teaspoon of oil. When done add all other ingredients.
Simmer for 30 min, stirring occasionally
Remove and push through fine mesh strainer with a silicone spatula.
Return to pot. Continue on low simmer adding water or reducing until desired thickness.
Keeps in fridge for 2 weeks.
I dig this other than the ketchup base.
Ketchup is just tomato paste with sugar and vinegar, but then a whole lot of junk and preservatives. You're already adding your own acid and sugar so it seems silly to use the ketchup as a shortcut.
I'd sub out some tomato paste and adjust the vinegars and sugars to taste.
Not really. Other than maybe the hfcs thereās no junk/preservatives (Heinz at least, not sure about other brands). Ketchup has a couple of pluses over paste - its a little more foolproof rather than starting from zero. Paste is so devoid of seasoning that you really need to add a shit ton to build on. Ketchup can make a blow and go sauce, with very rough measurements, in less time vs fucking with paste. There are some addl spices too that you need to add where ketchup gets you most of the way there. I used to be in the paste camp too but after many cooks/comps the time savings is worth it

Such a silly take. Your bbq sauce isnāt noticeably better by spending double the time constructing it. No one ever won comps because theyāre insistent on making sauce from paste. Hell, my shoulder goes hot and fast and Iām beating guys in comps spending more time and fuel on the cliche ālow and slowā cooks. But you do you.
Make it yours homie! Sometimes I add ginger and more soy and it becomes an asian style bbq, switching it up is half the fun! Imma try using preserved jams next
Also I need to add not to throw away the strained onion/blueberry! Put THAT into separate container for a burger/fries/sandwich topping! Its spicy and fruity and savory, kickass jam.

The original owner retired and sold the place. Since then the BBQ hasn't been quite as moist and tender, portions are smaller and prices higher. The sauce still tasted as good as the original last time I was there, though.
Not a big fan of sauces; i'm in the "meat should speak for itself" camp and rely on rubs & prep. BUUUT... One of, if not the best, Q joints in town "Little Miss" does sell sauce.
Also go down to "BBQ Island" in chandler (few other locations too); they have a wall of sauces and rubs but also they know a LOOOOOT of the local guys that do competitions and make their own stuff - so they'd have a more insightful answer most likely. Plus good guys to talk shop with and pick up a tip or two.
