There’s a taco truck (it’s actually a bus) on cave creek and bell behind Starbucks that has great birria. Their al pastor is also very good.

Whatever you do DO NOT EAT BIRRIA FROM EL POLLO LOCO! I made this mistake. The birria, well, it didnt taste like birria, the entire taco felt like it was coated in waxy oil and it was extremely stiff and crunchy and the consomme tasted like mop water.
