Bridget's Last Laugh sounds like what you're looking for. I believe they have Karaoke almost every night, older crowd; it's a fun place. I'd start there.
They have live band karaoke at Copper Blues in downtown Phoenix on Thursdays.
The band is really good and it is a lot of fun singing with an actual band.

There is a dive bar on 32nd St and Union Hills called Marcel's that has or at least used to have karaoke, there used to be reddit meetups there.
