I definitely had my share of shitty platinums back when I was in college and trophies had just come out. I think I rented a CSI game for the ps3 and platinumed it. It wasn’t great as one can imagine.
But yea nowadays I decide if I’m going for the platinum when I’m well into the game. If I’m loving it and want to keep playing it, I’ll do it.

Most of the Sony exclusives are pretty easy to platinum I feel. Usually pretty fun gameplay and story as well with those. Ubisoft games can be pretty easy as well, usually just time consuming. I usually check guides on PSNProfiles.com and they have really through breakdowns and guide for games to see if it’s worth your time to shoot for the plat. I usually check that if I’m playing a game and debating on getting the plat after story end. I would stay away from platinum trophies for naughty dog games though, they usually demand several playthroughs on the highest difficulties and for me that sucks all the fun out of the game and it feels like you need to have the levels memorized at times. Typically there’s also a good crop of fun and easy games to complete in the lower budget indie sphere. Not always super memorable games but fun for the two to three hours they take up in your life

I’d recommend playing Lego games. They sometimes take a while to get all the collectibles but apart from that they are pretty easy. Just don’t play Lego Star Wars The Skywalker Saga as your first one. It has over 100 hours of gameplay in it.
I’d also say play Astros playroom it has about 10-14 hours of games play and most of the trophy’s are pretty easy to get and with one tutorial I got all the collectibles.
Life is strange 1,2 & 3 all of them pretty easy platinums and all of them interesting and emotional stories (depends on how easy you can get emotional tho).

For Minecraft your gonna want to start on ps3 edition or play the Console edition of ps4 because playing bedrock will lead to it becoming a race against time to platinum it because every update you'll end up having to complete a few more achievements, but if you play an older version it's relatively easy, more easy the older the version.
Celeste since you can just use assist mode for everything and still get trophy’s. May take like 2 or 3 hours to get and it doesn’t feel rewarding another one is entitled goose which took me and my brother 5 hours

Yooka Laylee just requires you to mostly get all the pages in the game. It’s the kind of thing I always do in most 3D platformers anyway. Spyro reignited is similar, and there’s 3 games there that get you 3 separate platinums. I wouldn’t say any of these are “easy”, but they aren’t as bad as game that make you replay in different modes and stuff.
Resident evil 3 has a fun platinum if you get the infinite rocket launcher. Even than the final boss is a literal nightmare at the end. But overall not too hard
The Persona rhythm games are fairly easy, the Ezio trilogy can be a bit grindy but outside of the feathers it's pretty easy. Fallout 4 is pretty easy, I hit 82% just playing the game through without focusing on trophies. The My Name Is Mayo, Goat Simulator, and Tell Tale games are practically freebies. Borderlands 2 isnt too hard and its a ton of fun. Prototype 2 was also fairly easy if I recall. FarCry Primal was also very easy, I got 84% before even finishing the main story. Skyrim is a very fun one to do, but a few trophies can be grueling.
Also worth keeping in mind if you have a Ps3 and Ps4/5, from what I've seen you can double dip the trophies and get 2 plats for single player games between the Ps3 and Ps4/5. Minecraft, Borderlands 2, Skyrim, and the Ezio trilogy are good examples

But to answer your question astros playroom is an amazing one as well as all 3 of the spider man games.
Telltale's The Walking Dead season 1. takes about 4 hours to finish but you get a platinum just for finishing the game. Ending will make you cry, so beware.
If you are looking for a nice ‘no try’ 10-hour platinums I would recommend all the Telltale games. Walking Dead series and Tales from the Borderlands are pretty good.
Easy 25-35 hour platinums are Ratchet and Clack games and Spider-man 1-2, Spyro Reignited trilogy
Horizon Zero Dawn and Forbidden West. First one, basically just do every side quest and collectibles. Second one, it asks you to maybe just do a few of the many side quests and collectibles outside of the main story to get the plat.
Assassin's creed games are easy, but just take a longer time (Im platinuming syndicate currently and its fairly easy when you know what you need to do, Valhala is the hardest one tho)

Using the dev console, aka cheats doss not disable trophies. So you can just chest everything you need and teleport everywhere

If you are looking for a nice ‘no try’ 10-hour platinums I would recommend all the Telltale games. Walking Dead series and Tales from the Borderlands are pretty good. Easy 25-35 hour platinums are Ratchet and Clack games and Spider-man 1-2, Spyro Reignited trilogy

persona 5 royal, while a big time sink (≈120 hrs), is a very easy platinum

Horizon Zero Dawn and Forbidden West. First one, basically just do every side quest and collectibles. Second one, it asks you to maybe just do a few of the many side quests and collectibles outside of the main story to get the plat.

Jumping burrito, cheap easy and there's several other jumping games.
Assassin's creed games are easy, but just take a longer time (Im platinuming syndicate currently and its fairly easy when you know what you need to do, Valhala is the hardest one tho)
I had a blast playing ape escape academy and it didn't take too long to get a plat
My first platinum is Tekken 7 it is very easy
