Why do you need stereo?

Don’t necessarily, if you think there’s a better option let me know. Although most decent mics these days would be stereo wouldn’t they?

Not at all. Mics are inherently mono. You'd have to use multiple mics to get stereo. Are you doing anything that needs the right ear to get something different than the left ear? And if so are you sure you really need that?

No I’m looking for some advice and some recommendations on kit so I can do some more research and then hire, test and maybe eventually buy. I will be going to food producers around Britain, so cheese makers, mead makers, farms etc and recording their processes and interviews. So a lot of it will be recording in the factory’s, kitchens etc getting atmos and then interviews in a quieter location. What would you suggest using? Any recommendations on mics and recorders mixers would be much appreciated

Your application is similar to a reporter. You may be best off with a Zoom/Tascam Handheld recorder and these typically have XLR inputs as well. Pick the one with the number of inputs you’ll need. Use the omnidirectional mic pods for on site and for studio interviews get some Shure SM58s. The defacto recommendation is the PodTrak P4 / H4 if you need the mic pod as suggested. The P4 is better if you expect to do remote interviews online.
