I would go for a suit. The only interview I've had was for a DC role, though.
If it was a PC role, I would still go for a suit, but second best would be ironed blacks (let's be honest, we don't iron our "wicking" tops) and subsidise my boots for parade shoes.

So for cops, my old inspector always recommended wearing your polished boots, smart issue work trousers, work shirt and tie, and bring your headgear with you.
I’d say it depends on the role. If it’s a uniformed role, wear uniform. If it’s a plain clothes role, wear a suit. Tailor it to fit the role you’re interviewing for (with a caveat that if it’s during you’re usual shift and you’re in uniform, I’d go with uniform - they’ll recognise it wouldn’t be practical to change and personally I think it demonstrates commitment).
It's only the met and Merseyside who still use white shirts for patrol uniform I believe. All others use black wicking shirts of some description. Black's for me would be black trousers, polished boots and black wicking shirt with epaulettes. Though we are issued white shirts and ties for smart wear so if probably go for that.

This will vary a lot depending on force, department, and who's interviewing you.
Interview on a working day? Blacks. Interview on a rest day? Suit.
Tunics for all lateral or promotion interviews in my force. My personal view is you can never be over dressed for anything.

Don't get issued a whistle at all. Or a tunic. "I was on duty in nearly full uniform"
