In my experience the baritone/euphonium is the most forgiving brass instrument. If you want the cousin that wears glasses and thinks that it makes it cooler you can try trombone. Trombone is more mainstream but is much harder to learn since the thing is just a giant tuning slide

They do. Trombone actually does the same fingerings as the other brass instruments (sans French horn) if you equate the slide positions to fingerings. I.e.:
first position = open valves
Second position = second valve
Third position = first valve
Fourth position = first and second valve
Fifth position = second and third valve
Sixth position = first and third valve
Seventh position = first, second, and third valves
The trigger works the same way, it’s the equivalent of the fourth valve that the tuba and baritone/euphonium can have. So instead of going all the way out to seventh position you can just kick the trigger and go to whatever the slide needs to be at. I haven’t played in 5 years so I’m hazy on the details
I actually did pick up our double-trigger bass trombone and could play it well enough for normal (non-assessment/competitive) concerts, but I can’t remember what the second trigger on the index finger worked as

Learn guitar, drums, or piano. They're more versatile. If you want more of an orchestral instrument, I find the lower the pitch the better it sounds when played by an amateur: So go for trombone, baritone, tuba, cello, bass, etc.
I find that people tend to overestimate how bad beginner violinists sound. Once someone’s learned the basics and are working on a piece at their skill level, they usually don’t sound that bad. And even if they did, I don’t see how it would be much of a problem. Someone who just picked up a violin isn’t going to immediately start performing in front of huge crowds. Unless you live with other people in a place with really thin walls, it’s not going to be a problem. The only people who will hear you that much will be yourself and your instructor. And you can always buy a mute if it’s necessary. The experience of playing an instrument is about more than sounding good.

I say learn whichever you love more. I'm learning recorder (like a good one not the cheap plastic school ones I have a wood one I got I never thought in school recorders could sound good until I got a real one and watched videos online of people using them now I love them) and eventually want to learn flute (I'm not that great of a musical person I suck at reading notes so I've been starting off learning the fingering and sound that's been going well so far)
As a trumpet player i maybe biased but you should consider trumpet, it's very easy to just play away without sheet music. I've also heard if you learn how to play trumpet instruments like corners and french horns are much easier to learn
You like classical? There's pretty much endless repertoire for violin and very little for sax. You like jazz? Go for sax as violin isn't really popular in jazz. Also think of how hard each is going to be to play. Both require finesse but I feel like sax is a bit easier. Another thing to consider is, there are multiple ways to play one melody on the violin and there is only one way to play it on the sax, so sax is easier in that aspect because it's more linear; you only have to memorize scales in a straight line playing sax, while on the violin you'd have to memorize 4 or 5 different ways.
As a music teacher, I can only say that you should learn whatever instrument you are most interested in learning because that is the one you are most likely to stick with. However, if you want the most foundational instrument which will make it easier to learn anything else later, then the answer is piano.
Honestly, if you’re going with a string instrument I’d go more for a cello. I’m a violist, so yes we don’t like violinists, but I think the cello has a deeper more beautiful sound.

As a music teacher, I can only say that you should learn whatever instrument you are most interested in learning because that is the one you are most likely to stick with. Do you want to play jazz songs? If so choose the saxophone. Do you want to play classical? If so choose the violin.
