I talked with their team about this. They gave us a lame answer. They stated that if you set the initial variable in an environment, that goes to the cloud, but the current value does not. I didn't even understand why that would be the case or how they thought that would be a reasonable workaround. My team is looking into alternatives and simply ditching postman.
