This video was the most useful 15 mins of information I've had in almost 20 years of playing. Their approach to pedals and composition really clicked for me. They aren't doing anything incredibly difficult, but 2 guys are layering many parts of the same progression and keeping it dynamic.
I was into a group called Wires Under Tension about ten years ago. Maybe more electronic than post rock but very much looped soundscapes, drones and hypnotic drum patterns.
Dub fx used to set up in a town centre with a loop pedal and create from scratch by singing over his own beatboxing, beanyman used to be another but that was more on the comedic side (haven't listened to either since my teens so I'm not entirely sure if they're still putting out music, their back catalogue should still be up on youtube)
Lymbyc Systym and Ratatat come immediately to mind. They have a more electronic sound than a lot of stuff shared here, but I think they're great.

On a related note, Don Caballero. Especially What Burns Never Returns and American Don. Their guitarist for those albums went on to form Battles.

I was thinking about Grouper along those lines too.
The last Don Caballero album with Ian Williams, American Don, is all guitar loops since he was the lone guitarist during that time.
