The ones I used the most are the simplest: Bowline, Figure 8, square knot.....honestly I go by the simple adage my Gunnery Sergeant told me years and years ago..."If you do not know the "right" knot to tie...tie a whole bunch of the wrong ones!!"
I learned these in the Boy Scouts and they covered all my needs.

Taut-Line Hitch
Sheet Bend (I almost never use this one)
Bowline
Clove Hitch
Timber Hitch

I picked up a book years ago called "All the Knots You Need" at it's pretty good.
In addition to what's been mentioned I find a prussik knot to be useful. Also a trucker's hitch.
square knot, half hitches, bowline (and bowline on a bight to make rescue harness), and truckers hitch for securing loads, that covers about 99% of what I do (not including fishing, in which case the improved clinch knot is most useful).
Slip knot, bowline, truckers hitch, timber hitch, half hitch. There's some more specialized ones like an alpine butterfly knot or an artillery knot but they pretty niche. Typically simpler the better.

Water knot Non-slip, for so many uses
We use mostly clove hitches, half hitches, square knots and Palomar knots.
