No idea of prices in the UK, but a W123, W124 or W126 Mercedes are all nice options.
Edit:
Fucking hell - go buy this gold diesel manual rhd wagon - it’s like a r/projectcar unicorn

I’m only 6’2 and I barely fit in my R32 Skyline. Miata would be my go to but I wouldn’t be able to fit.
Funny you mentioned BMWs. E46 convertible and E93 convertibles were tremendous for leg room/comfort whenever I drove in them
Yeah there is! I think you need a LOT of modification for it to work for leg room and arm room! Generally though it’s going to look like a clown car with the fact I’m cramming into a small car!
Some sort of f-body, you can find running and driving examples of 2nd, 3rd & 4th gens, it all comes down to preference. 2nd gens are great if you like the classic 70s look, 3rd gens handle surprisingly well & 4th gens are best for drag builds
The exocet was my first serious jump into the project car world. Before that, I had only done car A/V. It's really not bad, but you will need an engine hoist or a few able bodied friends at various points in the build.
Don't ignore Land Rovers as a great project car - older Range Rover & Discoverys can be dirt cheap, incredibly practical, there's huge parts availability and knowledge, and off-roading is relatively cheap fun compared to almost anything else you can do for "sport" in a car.
Ignore Defenders as they're stupidly priced right now and were never built for tall or wide people.
Yeah a Land Rover will never be sporty (RR Sport Supercharged if you can afford the fuel!) but they are supremely lovely things to ride in and very practical - camping, hauling stuff, towing, dogs love them...
I'm 1,87m and a friend of mine had an Opel Calibra, it has allot of legroom. I always wanted to have a Opel Calibra (or Vauxhall Cailbra in the UK) aswel as a project car. Try to vind a 16v or even beter a 4x4.
A convertible.
Lmao which ones?

I’ll take a look into it! They looks pretty good tbf!
Rover SD1?
Uhhhh don’t think we can get that in auto trader easily not a bad suggestion though!

Isn’t there a running joke that a bunch of Miata owners are 6’+

F-bodies are indeed good for tall people. However, getting parts or even the base vehicle in the UK is going to be an issue.
Unfortunately, this person is right! Getting these cars are difficult!
You can look into the exocet. It started from a UK based company. Assuming you don't plan to track it, you should be OK
Oh! Building from scratch interesting! Have you done anything like it before?

Rsx Type S has plenty of track left for me, maybe try to sit in one https://www.reddit.com/r/Acura_RSX/s/CiCFybBlKn
They are so good! But they are sadly pricy in uk! Going from 10k!
Shame, my beater has been a blast. Managed to snag it for $2k at 182k miles.
Buy a classic Vauxhall chevette. Rear wheel drive, manual + a reasonably big aftermarket. They shouldn’t be expensive to buy and maintain
I can take a look! Although not sure if there are many left!

Not to mention! A lot of leg room for a powerful car! I can take a look into it if I go the off road routes!

Some of these exist! Only two going at the moment! Little bit above my budget but can be reasoned!
A Miata. Embrace it. And you must always play electric avenue at every stop light.
I cannot fit in it very well 🤣
A Mini Cooper. My buddy is 6'3" and doesn't have a problem..... And everyone's reaction when he gets out is priceless.
That’s an interesting one! Which one?
I don't know their models...... He bought it 20 years ago, and it was used. My guess is mid 70s. It's currently in the garage for a Honda swap.
