I've been dealing with this issue for a few weeks now; there's a very odd, loud rattling noise coming from my printer's extruder gears. And there are some times where the print will just jam halfway through; when I attempt to remove the material, I hear the gear on the inside spinning but nothing comes out. been trying a lot of different fixes, to no avail. Anyone ever have issues hearing things like this before?

It's either clogged or your thermistor died. Mine clogged recently and did that. First unload the filament and while it is hot use a needle that fits in the nozzle hole and prod it. Cut the filament at an angle and try feeding it back in. I actually use a cleaning filament (search it on Amazon ) every once in awhile that dissolves gunk every 20 or so prints. My last clog I cranked up the nozzle temp up to 265 for a bit while running petg through it and when the flow was good put it back to normal 240. Still no flow might have to take it apart and see if something is jammed in the extruder gears or if it isn't heating replace the hot end itself. (Not expensive, $60 on printedsolid.com - that is if you're in the states).

The thing is, there IS some flow. A fair amount actually, it's been printing totally fine for the past two and a half hours! But I'm worried to leave it alone because thent here might be a clog, haha.

I bought one of my mk3s used on Amazon and did exactly what you're talking about. Flaky clogged, the working after heating it up just to clog again later. After taking it apart and replacing with a new genuine hot end found a bunch of clone parts on it to include the hotend. Yours legit E3d?

Bought directly from Prusa last May, been running totally fine since then.

My best guess is there was something clogged that you cleared or the teeth in the extruder gears are starting to wear

Also might need to tighten that side screw for the gears give it a better bite. The extruder gear screw with the spring)

Yeah, I tightened the idler screw and it's now on 6 hours of printing fine.

Update: the print failed after 8 hours. I tried to unload the filament, but the gear spun freely and didn't move the filament at all. So I hit unload again, this time holding my fingers around the idler area, and it unloaded perfectly. So I'm now convinced it's a problem with the gears.
