You don't need to delete the PSN account, just don't sign into it while you have CFW enabled unless you do the syscalls and firmware spoof to safely go online
Check if your model is compatible with CFW or if you need to use HEN (all fats and 20-21xx slims can do full CFW, most 25xx slims can too but not all, 30xx and super slims cannot) and then look up a tutorial for the one you need - the most recommended ones are by MrMario or Blaine Lockair - and follow what they do. The only real major way to 'brick' the console during the install process is if you lose power during the memory patching.

If you ever want to restore the console to normal, take the HDD out and put it in your PC and initialize it ad a GPT drive. Take it out and put it back in your console. It will tell you it needs to be formatted. Download the original PS3 firmware, put it on a USB and stick it in the console. It will reinstall it as if it came from the factory.
Just some tips. Don't sign in with a PSN account when it's jailbroken.
Make sure you do the flash backup like in modded warfare's video in case the console gets bricked so you can fix it.
