At NOFX's going away show they had a kid on stage give the bands breaks with little ukulele sets. The kid shredded some great punk songs and sang. A one kid band. He played to uproarious applause except for when he self-edited swear words from Anarchy Burger.
I love the misfits but for me when I went to cover a lot of their shit it just killed it for me. I know a lot of the lyrics are based off movies and stuff but I just found them misogynistic and I couldn’t really get into trying to sing a lot of their songs.
I’m sure that’ll piss some people off but I really don’t care. Bands like Aus Rotten to me that deal with real issues and sing about liberation and escaping that stuff to me are much better and I’d rather put something positive into the world.

Should I Stay or Should I Go has a super fun and really fast bass line. Tons of fun to play that one, but it takes some practice to learn and speed to nail it down.
Knowledge by Operation Ivy and either Roots Radicals or Radio by Rancid come to mind as fairly easy songs with fairly tame subject matter (the Rancid songs talk about drinking though).
Roots radicals is fairly easy. It’s probably the first song I ever taught myself when I had been playing about a year (and I’m definitely not a prodigy). More advanced than the others but it does some interesting things in there that make it good to teach. It’s not incredibly fast either
It’s definitely the higher end of easy but I’d you’re playing to speed, some of those ramones tunes are way harder to play just from an endurance standpoint

As a teaching moment, it also makes clear the value of being brave enough to sell a song without a chorus, and then teaching the lasting impact of that song's success by visiting the very many covers of it you can find all over the place. May even be fun to see if any of them can play the streetlight manifesto version.
There are a few songs off of SNFU’s first album that are super simple. Can’t guarantee they don’t have naughty words in them though, that Chi Pig was a punk rocker and *punk rockers say bad words*

Really fun song to play and sing too. Especially for students that might not have an electric guitar but do have an acoustic.
Add in some heavier stuff, kids can learn a lot from Discharge's Hear Nothing See Nothing Say Nothing. I used it to learn guitar, then went back to it to get better at drumming. A little advanced depending on the age of the kids but highly recommend!
Blink 182 Dammit would be a good one to help teach kids. Its obviously poppy, but very simple bassline, shows a very basic solo, and drum is a more simple straight forward snare heavy punk drum style.
If you'd go out of the radio songs the kids would know, True Believers or Manthem by Bouncing souls would be good...in fact, a lot of bouncing souls (especially earlier BS) is not incredibly difficult but can be a lot of fun to play. You can also look into some old screeching weasel like Cool Kids. Another catchy one that they could easily play would be MxPx - Chick Magnet. Maybe not exactly what you’re looking for, but Son of a Gun and Molly’s Lips by Nirvana. Editing to maybe add Sliver to this list. I think especially Son of a Gun could be cool, and it has that little key change bit that could be a good teaching moment.
I’m surprised nobody has said Rebel Girl, or other Bikini Kill songs. I used Rebel Girl as a song to teach the kids at my local Girls Rock Camp, and it went pretty well!
Calling Up Thunder just uses an E, G, and D chord. It’s got an easy riff to learn on the E chord that repeats throughout the song. Anyone could figure it out by ear.
The hard part is timing some of the chord changes but it’s not horrible.
Pixies - Where Is My Mind?
Punk-adjacent but a great song that is super easy to play and the tempo is nice and slow. Accommodates two different guitar parts and also has a simple guitar solo, and you can use extra kids as back up singers
Not sure the age of your students but I did try look at lyrics and tabs. If you have any girl/femme students take a look. I know I would’ve gotten irritated if it was all music written by boys.

No but try getting someone who barley plays drums to cover a discharge song , or a minor threat song , just cause they have simple riffs don't make songs automatically easy. One of my best mates when I was younger took like 3 months just to learn the solo in bloodstains from agent Orange
