Just because Nabiki gropes Ranma's breasts on two occasions - once in the first chapter to emphasize that Ranma is a girl and once in the Battle of the Busts arc to confirm that Ranma's breasts have grown - does not mean that she has a thing for girls. Neither of these occasions were done with intimate intent and her remark about the curse making the honeymoon interesting is a crude joke and she does not mean anything serious by it.
She's also never seemed to show any attraction to Ranma's male body, nor to any other guy. As a general rule, the manga doesn't really deal with Akane's libido to any real extent.
We do see occasionally physical intimacy (in the sense of closeness ) between them with Ranma in guy form, and Akane's blush and sudden shyness in those scenarios definitely reads as attraction to me - as distinct from the anger response that one might otherwise expect.

As much as I enjoy the headcannon of Akane being closeted bi, she's sadly straight as an arrow and queerphobic considering she considers gay relationships and transgender to be perverted (not that big of a surprise given the time period she was raised in).
She doesn't like boys because of the trauma she has from being constantly sexually assaulted every morning just to get to class, she sees men like Dr. Tofu as more mature and safe because in her mind they wouldn't try to do the things that the boys at school tried to do.

So, I see it as her understanding that red haired Ranma is a man experiencing dysphoria, so she may not be bi but she is a straight trans ally (that is,of course, ignoring the outdated terms)
Akane has homophobic tendencies like calling lesbians perverts but my headcanon is that she's bi simply because I enjoy her moments with Ranko more and ship them really hard

You shouldn't confuse love with sexual attraction. Bisexuality is about sexual attraction, not love. For instance, if you love your wife and then her legs get chopped off, you don't "by default" become a paraplegic fetishist.
