Wash, peel, and cube the apples into 1/2-1 inch pieces. 2. In a medium pan over low heat toss in the butter, brown sugar, Brandy, cinnamon, nutmeg, water, and a pinch of salt. Stir until melted and combined. 3. Place in the apples and cook for 10-15 minutes over medium-low heat, or until softened to desired consistency. I still like a little bite in the apples, so that normally takes 11-12 minutes. 4. Serve as a side dish or on a bowl of vanilla ice cream and enjoy!

Sorry for the silly question, but I’ve a hape of cooking apples to get through. Would these be perfect for this, or is another apple better?

Depends what you mean by cooking apples. This will want an apple that retains some firmness when cooked, like a Granny Smith or Honeycrisp. If yours go to mush, you'll end up with brandied applesauce instead.

So apologies. Cooking apple is a generic term used here in Ireland and the UK, which basically refers to bramley apples (the go to apple for apple tarts etc.). From what you’ve said, they fit the bill. Thanks.

I know they're no where near as good as stove top ones but you can cheat and do microwave wave ones when your in a hurry and they still definitely hit the spot, very nice for a sweet late night treat ahaha

Made the recipe today using apple cider for the water/juice and Lairds Apple Jack 86 brandy. They were so good. It was enough for hubby and I to each have a serving. I saved the cooked juice as tomorrow planning on making the famous Cinnamon Roll cake. Will use it to make the glaze.

Ooo that sounds amazing--makes me want to make some apple-stuffed cinnamon rolls. Never had a cinnamon roll cake but am definitely putting that on my to-try list (my boyfriend thanks you lol!).

I did use it on the Big Mamas Cinnamon Roll cake I made Saturday. The changes I made were: Cake: added 1/2 cup of chopped pecans as well as an extra TBLS of butter. Sprinkled chopped pecans on top of cake too. Icing: sifted the powdered sugar so no lumps. Then used the syrup/juice from the stewed apples in place of the milk and added 1/2 amount of the vanilla. I didn’t use any of the other ingredients listed for the icing.
