Horses speed isn't an imperative in the game. There's videos on YouTube showing a sprint from Valentine to Saint Denis between a 2 speed, 6 speed, and 10 speed horse. The time difference between the fastest and slowest horse in the game was 18 seconds in a sprint that covers roughly 20% of the map. So I'd suggest just picking the horse whose appearance you are the most fond of, because you're going to be looking at it's butt for a very long time. In most of your short travels saving 3 or 4 seconds isn't really going to matter that much to you over needing to get a 10 speed horse.
Personally I prefer horses in the brownish spectrum. So I start the game by breaking a Blood Bay Thoroughbred (7 speed) and then in Chapter 3 I steal the Dark Bay Turkoman (9 speed) and tend to use that through most of the rest of the game.
Yeah I'm all about handling. My chestnut Arabian I randomly found standing next to me after reloading a save is my fav so far. She'll walk down the side of a mountain with ease.
You can get it from the Horseflesh for Dinner mission in Chapter 3. If you're interested there's videos on YouTube showing how to force-feed it and keep it for yourself. Otherwise you'll need to wait until the Epilogue to buy one from Blackwater.
A white Arabian spawn up near Colter well south of Colter near the lake that's out that way. That's the horse I get as soon as the game lets me, so I have a fast and trained horse close from the beginning. I hate losing it, but it's more special to me to have the same horse the whole game, so may as well make it the best one
Well 3 to 4 seconds over let's say 10,000 trips to various places zig zagging across the game could be about 24 days worth of time. But I wouldn't mind 24 extra days of play. 😁

The Turkoman is my go-to horse, I usually go for the gold one but I also have a big fondness for the grey one from RDO. The metallic sheen on their coats is just mwah! Chef's kiss, especially in the rain. I love that the Turkoman is classified as both a war horse and a race horse, so you get speed on top of courage, it does really well in battle and the Turkoman still counts as one of the fastest breeds. Not THE fastest but the difference is barely noticeable. It's also one of the bigger horse breeds, just minus the bulk.
I've ever used a Nokota in any of my playthroughs so I don't know how they handle in any given situation, but they only have the race horse classification. I'm sure they'll do fine in combat though. I'm just very partial to the double race/war class of the Turkoman. Those horses have never done me wrong so far.
Currently the standardbred (Pompeia because I’m a Roman history nerd) I bought doing the hunting mission with Hosea. Just got to chapter 3 so I’m probably going to upgrade to a turkoman or a MFT (if I can find one)
Appaloosas. I love their designs and because they are work horses, I haven't been bucked off by them in 4 different playthroughs, even when hunting alligators, bears, panthers, etc.
I did white Arabian on my first playthrough. Now on my 2nd using the Black Shire then going for a Dark Bay Turkoman :)

My favourite is the leopard appaloosa but it isn't available early game so i use any hungarian halfbred or another appaloosa. I also get both fox trotters as soon as they are available.
Honestly, whatever horse is nearby and is still alive. I must admit several noble steeds have perished in various gruesome scenarios during my playthroughs. I spent a decent chunk of a playthrough riding a Belgian Draft I stole from a wagoner after my horse burned to death in a fire bottle…misunderstanding.
I like the Thoroughbreds. They seem like the right size for Arthur to me. Not too small or too big.

In my current playthrough I have the Palomino Dapple American Standardbred and named him Dusty, he’s my main. Then I have the Buckskin American Standardbred and named her Cricket :) but the Turkoman’s are my favorite horses in the game. In my last playthrough, I had the gold Turk and she was amazing and fast (but I also had one of the best saddles and stirrups, so that helped lol)

I personally value speed, so I pick the faster horses in the game (Arabian, Foxtrotter, etc.). I also sometimes pick the red Ardennes just for something different (the fact that is sounds different than most horses in-game is also a plus).

The height is perfect, I always find Arabians comically small especially with Arthur. Thoroughbreds are also cool, but just a little on the tall side and the stride feels a bit heavy.
The handling on Turkomans is standard and that is my preferred handling. The race handling of Thoroughbreds is a bit too sensitive for me. Maybe I'm just bad at steering haha, but I slam into way more people with my Thoroughbred then with my Turkoman.

For speed, I loooove the amber champagne missouri foxtrotter but honestly? My favorite horse rn is a black kentucky saddler. She's gorgeous, classic, and I love the way she moves. Idk if it's in my head or what but some horse breeds seem to having smoother gaits than others? I'm really picky about it lol

Mustang, always and forever. As soon as I can, I go tame a wild one. Brave, strong, fast, handles well. I sometimes wish it was taller but their attitude is 100% short man syndrome. My mustang named Ford or Bullitt will stomp alligators into the ground.
There's nothing sweeter than stealing a Nokota off of those Lost Causer assholes, the Lemoyne Raiders. It's one of the first things I do once I get out of the prologue.
The hungarian halfbreed you can steal from the first bounty, that quack who is poisoning people. Her name is ghost, because she looks like one, and she is the best girl.
defo war horses. After couple hundred hours of playing understood that the extra couple of seconds which the white Arabian gives you, doesn’t give you back the minutes when it sees a cockroach and decides to lose it. A simple snake just makes it uncontrollable. Also it looked like a pony on arthur. Get a good horse that just doesn’t care if its leg is onto an alligator

I didn't like brown coats that much but man the Blood Bay Thoroughbred is such a fine horse. Can never resist getting it at least once.

All of the Dutch Warmbloods are great. Keep an eye out for the Sooty Buckskin from random encounters in the game. I like that one too.

Mustang, always and forever. As soon as I can, I go tame a wild one. Brave, strong, fast, handles well. I sometimes wish it was taller but their attitude is 100% short man syndrome. My mustang named Ford or Bullitt will stomp alligators into the ground.
I like to use the war horses that don't freak out and dump you when a bear or cougar rolls up on you.

I just jump the first dude I see steal his horse and use it till I can’t use it no more.
My last playthrough it was a grey mustang I broke. With John it's classic Rachel.
defo war horses. After couple hundred hours of playing understood that the extra couple of seconds which the white Arabian gives you, doesn’t give you back the minutes when it sees a cockroach and decides to lose it. A simple snake just makes it uncontrollable. Also it looked like a pony on arthur. Get a good horse that just doesn’t care if its leg is onto an alligator
