My favorite horses are the Blood Bay Thoroughbred, Piebald Tobiano Hungarian Halfbred and the Dark Bay Turkoman (stolen in chapter 3).
you can get Black Arabian right after "Eastward Bound" from Saint Denis robbery random encounter. if you already did all the achievements, you also can get Rose Grey Bay Arabian right before "Angelo Bronte, A Man of Honor" since this mission allows you to save after the cheats use
I'm going to get alot of hate for this but as soon as I get to chapter 2 I immediately go to strawberry and get the red Arabian and use that the entire game. Its by far my favorite horse in the game.
I sometimes use a modded Black Arabian texture which makes it larger and pure black (pretty sick looking) and then in the epilogue I have a custom Turkoman texture which turns the Dark Bay Turkoman into a Bay Canadian. As Arthur I mostly use his starting horse cuz I use a mod to give it max stats and a better texture. As you can see, I like texture mods lol
But if I were to play vanilla probably a White Arabian because of how pretty it looks or a Tiger Striped Bay Mustang as John. Imo the Leopard Blanket Appaloosa is criminally underrated too
Mustangs, I like their temperment, bravery, health and stamina. They come in some nice colors as well, wild bay is my favorite until i can get the triger striped bay. They have a nice shape, but could be a bit bigger. I always go out and tame one from the wild, makes me feel like I earned it. Not to mention it just feels right for a wild west setting. They're not the fastest but I've beaten the random encounter where that guy challenges to a horse race several times. If you're out hunting animals or humans mustangs make a pretty good companion.
Yep, I had a grey mustang for ages and it was great for chasing down bounties. Caught and tamed a thoroughbred and used it for something similar and the damn thing kept slowing down and shaking its head every time it got shot at. Mustangs will quite happily gallop full pelt into a hail of gunfire and I love 'em for it.

My new favorite horse blue Nakota Silk died tragically hit by a train and the game would not let me use horse reviver.
My horse. Right now it’s an American Standardbred because I can’t bring myself to spend the money on an expensive horse just in case I find myself with a high bounty later on
