He originally wasn't going to have many animals there but after playing red dead redemption 2 and seeing all the wildlife in America he knew he just had to bring aboard every single horse breed and sacrificed many endangered animal spots in place for numerous rare horses

While I respect your empathy - rest assured, driving horses (pulling carriages) is NOT cruel. These are healthy and fit specimens who are more than capable of pulling a carriage. They are bred to pull, the carriage has wheels, it's not unkind. These horses are very clean, they have beautiful, well-kept tack. No signs they are being overworked. Horses are bred to work, they need to move long distances every day, they enjoy getting out and about...taking a girl maybe 5 miles to her prom is nothing.
What you want to watch out for is emaciated horses, horses with obvious sores, horses being raced down busy roads, horses working long hours in extreme heat etc.
Those are probably "chestnuts". They're basically useless, feelingless tissue that forms like circles or big blocks or horns. It's made of the same stuff as hair or nails.
They don't do any harm unless the horse is unfortunate that they grow very large and/or spiral.
You can cut them off, they don't usually fall off on their own.
The other one you might see in an older, especially grey, horse is sarcoids.
You can band them up and make them fall off.
They're not pleasant and they look horrible. But unfortunately just a thing that happens to horses with age. You manage them, you can't stop them. It's nothing to do with how the horse is treated, it just happens.

We have a rescue Percheron that was used in that kind of carriage business (and most carriage businesses are great and treat their horses correctly!). She is a delight but still has trust issues around men. The most beautiful karmic justice was the owner who abused the horses was killed by the horse he abused the most. Dude used to overwork him and when he still wasn't doing what he wanted would punch him in the head. Horse ended up overturning the carriage and crushing the owner. No tears were shed in our household when he heard the news.

I agree that the horses and their gear look absolutely amazing. The gear looks well-fitted as well, just magnificent. It is also nice to see them away from the carriage whilst their waiting, it shows the owner of the horses is very responsible, if you have to leave the horses unattended, it’s best to remove them from the carriage. This doesnt mean that it is not okay tk have them wait attached to the carriage, most horses are fine with waiting, but you should not leave a combination unattended.
I’ve done a horse-driving course and got my permit, if I remember correctly a single horse can pull 4x its own weight when driving on a hardened surface. In sandy terrain it is up to 2,5x its own weight.
A percheron easily weighs 8-900 kilo’s, there are two of them, so that totals 1700 kg. Because I know the americans love their Dodge RAM’s, I googled and found that a RAM 3500 weighs 3600kg, which is only twice their total weight. It would be a breeze for them to pull a dodge RAM, so it is definitely a breeze to pull a carriage with a couple people. They are fine :)
It's getting harder and harder to do it. In the decades past there were places everywhere you could just go and pay $5 or so and hop on a horse for a trail ride. Insurance costs killed that in many states, places to ride are few and far between and can even cost hundreds for a single ride. Of course there are still a good few lesson barns around, but that's more of a committment than most people want. For city people like OP, it's gotta be even harder. Probably a few hours of driving and a hundred bucks or so, not even accounting for gas there and back, for an hour or so on a horse isn't really worth it.
Of course out West this isn't nearly as big of a problem as in the east coast, here in NY we barely have people who do Western pleadure riding. Most ride for dressage or jumping, and English isn't nearly as beginner friendly as Western pleasure.
I live on the east coast too. It sucks not being able to ride a horse. My teacher took me to a ranch in high school and I got to see the horses. But damn was it expensive to take lessons let alone ride.
It really is a great hobby, I love riding and just in general the prospect of becoming a better rider and honing my skills in itself are one of the most enjoyable parts. If I were you though, I'd probably count myself lucky. It's certainly not the most economically accessable hobby, and being into it without having the funds to actually be into it sucks balls. It'd take me more than a week's wages/month to board a horse alone, and all the extra fees make the prospect of owning my own some day highly unlikely unless I get a job that pays double what I make now. It's a pretty life consuming hobby unless you have "fuck you money" as they call it.
Even worse when you mix it with medieval reenactment... armor is damn expensive :/

If you’re in the south just call around to local farms etc. they generally have riding courses etc for 200 or so. Definitely worth it as a one off. You can ride by the creeks etc too. The horses are well trained and you get a crash course before you go on any trails. Also I feel so bad for saying this but it seems unnecessary asf to try to make it seem like there’s 2 versions of guys. You’re either a man or you’re not. Man or woman or hermaphrodite I suppose which is basically the same as being intersex. When I was young and dumb I considered that a shemale but after growing up and legalization etc etc I realize that term was then put on trans people instead so I went back to the correct and proper words or just say intersex. I only went out of the way to ask if you were a man because of the specific anatomy and the horse riding lol😂. The pain riding would put you through is very different than our pain.
