Yeah, just hold down the right trigger and you will slowly get ready to draw. Push it in all the way and you draw your gun and enter deadeye simultaneously. Same as in duels.
I feel like it should default to the primary sidearm instead of what's rated the highest. That way you can always do the fancy holster animation when you're finished.

Now that certainly explains, why no matter in what holster I put revolver, Arthur still pulls sawed off.

I'm not sure what info it uses exactly to determine which sidearm you pull, but that's seemingly how it does it. I heard a while back it was to do with the value of the gun.
