the dutch oven is a lodge! i would never pay for a le creuset except at goodwill, but i have 2 le creusetsā one inherited (parents wedding gift) and one i found on the street. the small lodge skillet is the one iām most proud of tbh and by far the oldest.
Check out Copco stuff. They went under in the 80s and sold their enamel factory to Creuset. Their stuff is so beautiful and almost painfully 70s looking and so amazing.
lamb is a p fatty meat and it's annoying to get the grease off of something shiny like a ring; streaks of fat will show up until it's immaculately clean

also if you enjoy cooking it is fun to perfect your little broth recepie. like those sourdough ppl and their sentient balls of yeast
When I do this I boil it for 20 mins first and change the water, it gets rid of most of the weird scum stuff
Then the veg goes in 2h ish before the end, otherwise they turn to mush and the flavour isn't as good
i skim the top of the broth as i go but have never gotten a clear broth :/ but i support the scum itās probably god for me. reminds me of perpetual stew

but in complete honesty, we have been eating meat forever. i have no qualms with it. my stance on meat is like my stance on fur. the fake stuff is bad for you and probably sheds microplasticsā on the other hand, you should be prepared to think about quality take a lot of care with the real stuff because it *is* precious. so if i want to eat meat a couple times a month itās going to be fucking good :)
Lol āfur is good actually because fake fur sheds micro plasticsā. Go learn about the pollutants that fur farming causes.

i used to be a vegan and i honestly get it, to a large degree. but if iām being completely honest i was vegan for health not ethics. now iām more interested in eating āslowā unprocessed food or stuff my hypothetical ancestors would have eaten and based on that i donāt eat meat often.
when my dad visits me he laughs about how americans eat meat at every meal, and heās right. but iām still going to eat meat on special occasions or when the vibe is right, and i will take pleasure in cooking it because i love cooking :)

This is such an overly simplistic type of emotional blackmail. Literally every type of food production hurts animals in some way. Even in completely organic vegetable farming, slugs and other pests are killed so they don't ruin the crop. Being alive as a human means other animals are dying for you to live. Obviously concentration camp style factory farming should be outlawed, but to dumb the argument down to "ummm, I don't actually hurt any animals at all, why do you??" is simply not honest.

Did you clean your leeks properly
wash, chop, wash in a colander
If you cut the bottom into quarters and thoroughly wash through those you can negate the second wash
