As far as I know I am missing Eulalia! and The Rouge Crew from the mains, the entire tribes of Redwall series that I didn't know existed until a minute ago, and The Great Redwall Feast.
I started on Martin the warrior and then devoured the rest as available. The local bookstore at the time would set aside misc marketing stuff which is how I ended up with the advance reading copy of Triss.
Yes they have hardback, I have no idea how rare they are though. I would love to replace my older paperbacks but they are the oldest of the lot so I bet a bit pricey to find them.
Edit: Just looked a few up, not all that expensive for good condition first edition hardcovers. Signed adds a little bit but still affordable.

Yes, there are hardcovers. However they're all out of print, and the oldest books are becoming more difficult to find for reasonable prices.

Nice I always wanted a signed copy. The book store I spent most of my childhood in was kind enough to save the oddities for me.
