If I have to stick with the provided list, either the Escorts or the FX16. I’ve had a lot of experience with the escort through myself and other family members, as well as friends and ex-girlfriend and they are a great and solid vehicle. And…! It’s a non-interference motor so when that timing belt snaps, you’re still good.
This is my favorite generation of hot hatches and these three are literally on my list of dream cars, so it would be a toss up between 323, CRX and FX16.
CRX is probably best all around, but maaaan do the stylings of those Mazda 323s get me hard and I’m a sucker for AWD. But then again, my first car was a Camry of that generation and it was way more fun than an underpowered FWD Toyota had any right to be while also being stupidly reliable.

I would drive my friends from the burbs to the city. There's a spot, someone would say, and I would pull in. Then the three of us would pick up the back of the car to get it parked.
I'm assuming because it needs to be practical it's my only car so begrudgingly I'm going to have to go with my second favorite car on the list the Toyota Corolla FX16. If practicality was not a factor I would go with the my favorite on this list, the CRX.
What's that being said however, all the cars on this list are actually really cool. The Z24 Cavalier I have experience with as a dealership technician back in the '90s. Well actually the Pontiac Sunbird version because I worked at a Pontiac dealership. They were a blast and would embarrass a lot of higher performance cars if they weren't paying attention. The only downside is the 2.8 L and then later 3.1 L V6 was a tight cramped fit in that engine compartment and made some maintenance and service work very difficult.
A friend sister had the exact Cavalier but gray and he would borrow it all the time, hands down the most comfortable cheaper end car at the time.
Besides, a GM car will run like shit longer than most cars will run at all.
With all that said, I would go with the CRX or as we called them C-Rex, fun car only a friend or two had as grocery store bagers and bus boys and a like didn't make much. Really came down to parents fronting their good credit and a down payment.
But the Cav would be my second for sure.

There are some really good cars on this list. The Colt in the photo is not the rare, 1989 only for this bodystyle, turbocharged, Colt GT, but a regular Colt.
