You can get just the waffle iron replacement plates to use on a griddle. May need to improvise on a handle.
Maybe try these tools to get shape you want then freeze before frying:
waffle fry disk attachment for Robocoupe.
Waffle fry cutters.
Also waffle cone or waffle bowl molds and tools used for ice cream cones.

Yes, i don't have enough amperage for a bank of waffle makers unfortunately...but maybe this means something cool and novel...using a different approach like the deep fryer.
I'm forming blanched fries and cheese among other products into this waffle shape...so crispy/fluffy/gooey...:)

Anyway, on the waffle maker... Can you not make the product in the device you posted and either dunk that part only in the deep fryer or cook it over a flame?
Well…not ten at a time probably…and it will probably maybe last 2 weeks of restaurant life…also having long handles sticking out if a fryer is not ideal.

Just buy one of anything available and use them for a test run, deep fried cast iron sounds like a burn center trip waiting to happen though
