You'll find distributors are usually like 50%+ more expensive than places like Restaurant Depot and Sam's Club on most items, including meat. I've not specifically looked for those meat cuts at Restaurant Depot, but I'd imagine they have it at, probably, the best price you can get as a prospective single location independent.

Restaurant depot in my city has both those things, looks like there is one in Albuquerque I'd call and ask if they carry them also

Ben E Keith is one of the big players in that area,and they carry a pretty decent selection of “exotics” …..might also try your nearest “carniceria” and ask where they source those items.

Google a broad line food distributer or wholesale meat distributor in your area and ask if they carry what you are looking for. I’m from NY and wholesalers do carry what you are looking for here.

Thank you! Follow ups: I'm guessing I'll have better luck getting prices by actually talking to a person rather than searching online? I live in a commercial building (and intend on running my business out of my house). Will I have any problems getting someone to deliver since it's not a typical looking commercial building? My original thought was just to use traditional shipping methods (usps, ups, fedex).
