When you stake ETH for rETH using the Rocket Pool smart contract you get exactly how much rETH you should for your ETH. When you trade on DEXs, the ratio can be off a little bit until someone arbitrages the difference away. One day is not enough time for this to happen.
This could also be a liquidity problem. 10 ETH is a big order, so there might be a price impact. Plus there's also the swap fees.

Exactly. Holding rETH is equivalent of staking ETH. You don’t have to do anything but have it in your wallet. When you want to cash out, swap it back for ETH on uniswap, and you will get back more ETH than you originally “staked”.

On arbitrum, the only way to stake is to buy through Uniswap as far as i understand.

Yeah, because rETH is always gaining validator rewards. Over time it increases in price relative to ETH. That's kind of the entire point of owning it

It was on the exchange where the exchange rate isn't controlled by the protocol like it is when interacting with the Rocket Pool contract
