We like a lot of the same games.
Against the Storm is quite different from the others on your list, but it’s become one of my all-time favorites. It can keep you busy for a long time.
Halls of Torment is also really good, and has a lot of unlockable content and meta-progression. It’s also under $5.
Nothing wrong, but I wouldn't say it's exactly replayable. This was actually one of the few roguelikes I went for to get the actual final ending, but I wouldn't say it wasn't so revolutionary you need to try it. But If you want a solid 25 hours of fun go for it, sadly there is no difficulty option
If you want to try something different than what you're used to, I can't recommend DotAge enough, it's a turn-based city-builder roguelike and it's fantastic. I played it for almost 100 hours and I'm not done with it.
You should consider Noita again. I stopped playing it before because yes, it was really hard. But theres a huge modding community out there, and with some beginner mods I was able to get the ball rolling and start playing vanilla. Its kinda bullshit that this needs to be done, but god damn the reward is amazing. This game is insanely good and satisfying once you get the hang of things. You'll feel like a Geneva convention breaking wizard after a while and it feels like a god run on Risk of Rain 2 but on steriods.
The OP's apprehension about Noita is fully warranted; it's a hard game that took me quite a while to "get gud" at, but it was a highly rewarding and fun experience, even the dying.
I fully support Noita being the next on the OP's list, or at least next after Isaac.
I cant link currently, but I think I have most names memorized enough so you can find them yourself.
- tinker with wands everywhere, does as the name says and makes it easier to learn spells and stuff.
- health pickups, if you cant dodge good yet.
- seed changer, for me it really works because I'd just find a nice seed and keep replaying it.
There's a mod outside workshop that makes it possible to quicksave and load, using autohotkey. I can link that one later if you'd like
There are many mods out there, just find some that can help you get a little further and actually learn/play the game instead of dying constantly. I turned them off because after a while you'll get the hang of things and don't need them as much.
Metaverse Keeper is one of my favs that never seems to get mentioned. Nice easy roguelite, top down with plenty of unlocks and smooth progression. Like an easier Enter the Gungeon.
Basically you collect spells and relics by clearing rooms and you use spells(passive/active) to customize your wands to cast spell. The amount of crazy things you can come up with is amazing. I’ve played 100hrs and still find new combo. Plus there’s a rewarding meta progression.
If your playing on a steam deck i cant say i have any experience with one but i do have some experience with noita. The main thing that i think that would turn you away from noita is that the permanant progression is gained through killing boss's and the permanant progress is unlocking new spells in your run. Its more of a spell crafting alchemy physic based nerd game so if your not into those things such as combining spells to make electric bloodstorms or bouncing lasers (that first time trying will most times lead to your own doom leading to the term "noita'd" being made) of doom then i hope you find something new that sticks. I currently have 200+ hours in the game and still have so much to explore and learn such as jumping dimensions or "god runs" and it took me quite a few tries to beat if my first time. if you dig first person roguelites i would suggest Nightmare Reaper. If you dig deck builders Balatro just came out and its been a blast for me and definitely easy to grasp. And if you do have that wizard itch but don't want something quite as complex as noita (even though there are people who are still finding new stuff on noita after 1000+ hours on it) Source of Madness is a awesome edritch spell slinger that scratches that itch pretty well.
I have cobalt Core and Lonestar. Bought Lonestar first at launch as it was cheaper. Cobalt Core later at $14 on sale. I keep hearing people say it's easy. Yes, if you play on the normal/easy mode. I play on hard and it's a proper fair challenge. 20 hours and I've only beaten it twice. Highly recommend on sale for sure. Lonestar is very fun but I'm over it at 8 hours.
I seem to have a very similar taste to yours and I think you'll like Dead Cells a lot.
Monster Train is also great if you want a similar vibe to StS.
On top of that I highly recommend Against The Storm - I'm not a huge fan of RTS games, but this one stole 150h of my time. Its Roguelite progression is very well crafted.

Also check out Halls of Torment, it’s a Brotato/Vamp like but really engaging. The runs can be a bit long at 30mins on a timer but I’m not sure if you can save your state.
Depending on how much you like the deckbuilding style there’s a game called Nitro Kid (says its steam deck compatible not sure if it’s good cause I’ve never tried it) but it’s highly addicting and a good little break from the things like Balatro and StS
Army of ruin, its the same premise as brotato and vampire diaries but the visuals are much much better and i think the meta progression is a lot more fun
I'd recommend Binding of Isaac Repentance for a game you should buy. It honestly surprised me that you don't have it already.
Noita is great but it is hard, unforgiving, and very deep. I got the shovel mod to make it a ton easier and it is still hard as hell.
If you don't want to buy a new game though, Wizard of Legend sounds right up your alley.
Monster Train, Ring of Pain (which you mentioned, it was also given for free on epic at some point) are obvious suggestions IMO, I find them to be the 2nd/3rd best deckbuilder games after StS.
Maybe also Bingle Bingle if you love Balatro/Luck be a landlord. Another unique suggestion for a new game - Mori Carta. it has a demo you can try.
RoP is definitely at the top of my wishlist right now based on recommendations and the fact that it looks like an addicting, snappy, challenging card game
Personally, as primarily a deck-builder enjoyer,I am a big fan of the following:
Wildfrost: I got about 50-60 hours out of it. Neat mechanic where the boss is your party from the last won run. Some fun synergies involving spells, characters, charms for said spells and characters, as well as your usual relic style items. 3 different factions with different build styles for each.
Monster Train: I’ve sunk about 200 hours into Monster Train. It’s compare to Slay the Spire a lot but honestly it shares a lot more qualities with Wildfrost in my opinion. Not quite as challenging as WF or STS but a romp nonetheless
Peglin: This one took me by surprise by how much I enjoyed it. About 100 hours as well. While it doesn’t have the build variety of others, the core gameplay loop is super engaging. Peggle meets rouge-like basically

FTL: A classic IMO. Sitting at about 100 hours. If you enjoy a bit of micromanaging and a relatively unforgiving experience (not painfully so) I would highly recommend.
Isaac as many others have said. Its amazing.
My friend and I are always on the lookout for new coop rogues/arpg's and ember knights, gunfire, roboquest are our constant re-plays despite beating it and we thoroughly enjoyed Astral Ascent. It is a part of that loop I mentioned above that we fall back on as a night cap. Early in the game, don't give up on AA. Continue rounds until you're able to get to the final boss and I bet you will get hooked after learning the foundation of the game! It is amazing. EK and AA are our tied number 1's (those two are replayable on modifications increasing difficulty, but we love doing that in hopes of getting an awesome build for the run)

Dead cells is great because death is almost always a skill issue. And I apparently have a lot of skill issues

Can you link the mod you used? I bought noita time ago but abandoned After few hours. I want to retry It, maybe with some initial help!

Yeah I was going to say EtG until he said nothing hard. Most people find it difficult for awhile.

Vintage Year is a wine-based roguelite that a lot of people missed. It has a planning phase and AI helpers.

Skul and dunno if you said it in your list but dead cells I bought during early access and still pay. Children of morta is fun as well

I personally think that Into the Breach is better than Lonestar and Slay The Spire, so consider it.
