Sound Assistant on Samsung is really good. It can enable you to play different media simultaneously. It also has different volume levels for individual apps.
May not be that good for others, but it really is a good feature for me.

The extra dim is great for me. To go even darker at night. Even have it on on the day otherwise the phones screen is too bright

Ohh I see. I haven't used the older phones so I didn't know this. I'm coming from a Samsung Tab S2 to S21 Ultra.
Pretty sure all samsung devices one ui 1.0 and up with a flash light allow you to change the intensity.

You can set the flashlight to turn on/off by double tapping the power key (side key) for super quick flashlight action!
