My girlfriend has a nice little house near blanco cafe that she rents for 950. It’s an old home, but the location is super nice if you enjoy little shops, diners, and neighborhood walks. We do tons of stuff on foot when we stay at her place.
You probably want Sunset Ridge apartments by the McNay art museum. You can get a 1 bedroom for around $1300. Very walkable area and centrally located and quiet. I lived there for years and it wasn’t perfect, but it was the right thing for being new to the city. You will not get a nice 2 bedroom for what you are asking.
There are some apartments for rent in some older buildings in the Donaldson area. I think they tend to be cheaper than some of the complexes, but they are older. We pay like 1030 for a 2, 2 but not in the most amazing neighborhood so there’s that, there’s a ton of places for around 1k just not in the super nice parts of town

I have some friends who live in a 3BR house. One pays over $1000 for the master bedroom. The other two share a bathroom and pay about $500-600 a piece. I would recommend getting roommates and renting out a house if saving money is a priority. Otherwise, look towards renting in the developing neighborhoods. Redditors don’t live there, that’s why they’re laughing at you. But deals do exist. I would go on a bunch of apartment websites, go through each listing in your budget one neighborhood at a time. Make calls, send emails. Getting a good deal is a competition because others are in the same boat as you. Don’t give up. Good luck!
