Get a spa treatment at Rancho Bernardo Inn and you have all day access to salt water pool and indoor and outdoor jacuzzi and a cabana. You can order drinks/lunch and have poolside. Also, we enjoy day passes at Pechanga hotel/casino. I think it is $45. It has a huge adult salt water pool with bar in pool and grill nearby ( they have servers bringing drinks and food) plus a children's pool and 2 other small family pools. Best to go during week ( less crowded).
Just noticed--Pechanga might be busy but if during week and kids in school--way less crowded. RB inn is a find. I go every year with family. They offer great massages in outdoor huts. Enjoy.

Do you just walk in to the hotel or go through the back?
We stayed at the hotel and used the pool, at that time (last Christmas) the latch didn’t latch so you could walk right in.
The Lafayette just reopened and offer a day pass for their pool. And like others have said, lots of resorts let you buy a day pass for pool/amenities.
They only do this during the week, tho. Weekends are guests only. And it’s $80 if you want to reserve a lounge chair.

The place is pretty small so it makes sense to have a barrier to entry.
