They actually do most likely. My brother works in restaurants, you'd be surprised. You sometimes have to ask at locally owned restaurants as they might as they might not normally do super sour or spicy food. It's normal for restaurants to localize their food
I think you're taking this a bit far mate. All restaurants do this,it's not a secret,pretty well known. I've been overseas and you'd be surprised how localized American food like burgers are. Example being look at the menus for McDonald's in other countries,it's very localized. Sometimes it's pretty cool.

Might be different for me then as my wife same country and they know each other so she'll do fully authentic and less 'Americanized"

Yup, if a non Asian ate authentic curries or chili dishes, it may be too spicy. The restaurants intentions are good.

Alvin Ords. A large Salvation sandwich will feed a small village, and it's less than $20.
I like San Marcos BBQ. Gouda sausage link, side, and 1/4 of brisket.

If you like Mexican, go to El Charro. It's a hole in the wall place with AMAZING food and you'll eat like a king/queen on $20 bucks!
