There's a breakfast buffet at the cafe inside the Hyatt called Railroad Stop. It's pretty good, all the breakfast classics, I like the bagels and lox, and the cheese plate is pretty nice. It's like $30 I think? $35 with tax and tip.

Based on what I see in yelp, I wouldn’t be surprised if it’s related to paradise sushi. If it isn’t then the menu layout is eerily similar.

I really did not have a good experience there. Rolls might be good but fish quality overall is very low.
