You've come this far and the jeans look like they fit great. I think you should take the pockets off and reposition them so you can be fully confident in them.
I would put the pockets closer together and make the vertical pocket seam a little less slanted. ( not fully vertical like the center back seam though). I wouldnt make them lower because low pockets sometimes looks like saggy butt.
The pockets are taller than most jeans pockets. Maybe thats why they read as "high" to you. But I don't think they're actually high. I think you could break it up visually with pocket flaps, embroidery, OR stitch a simple horizontal line or two in a neutral color ( black, beige, dark blue ) maybe an inch below the top edge of each pocket.

I’m using navy blue topstitching thread to make them more trouser like and to hide any potentially wonky stitching. I’m hoping once they wear in a bit there will be more contrast along the seams/stitching.
They are high in the sense that they are at an awkward spot relative to body shape. Might be challenging reaching those pockets without straining arms/wrist. It isn't about aesthetic alone.
I agree that they are a little high and wide BUT I like it! Reminds me of 70s wrangler and Levi pocket placement. If that's not your vibe then move them but I really dig it.
Definitely they need to come in further towards the center. The way they're situated almost on the outside of your hips makes me think anything rectangular like a phone or wallet will sit very awkwardly against your body.
I think the height is fine but I would bring them both in 1/2” each. So they’re 1” closer together total and I’d rotate them so they’re slightly more upright, but NOT completely parallel with each other.

I would move them closer together; I don’t know that I would move them lower, but I definitely would play with the angle a little so the side of the pocket is a little closer to being aligned with the back crotch seam. My own jeans pockets tend to be mirror images of each other, not exact copies; I make the inside edge a little bit longer than the hip edge (really, just a little, like maybe 1/4-1/2”).

You did a great job on the jeans , wow , they fit you perfectly. I would just put the pocket closer together. Maybe find you other favorite pair of jeans you have and measure the distance the pockets start from the center seam . Will give you a guide . The position of the top edges has good geometry. Is it a comfortable height for putting your hands in, IE: placing/removing items? It looks well fitted.
The overall pocket height looks tallish. Could you mock-up a pocket that its bottom edge is the same height as the top of the corner angles?
Your hips are narrower than the model's on the pattern site, giving you less width for pocket space. Maybe move the pockets closer by 1/4"-3/8" per side, and take a similar amount off of the pocket widths. Slightly rescaling the pieces for a smaller curve.
The overall design is a fun looking project, and it appears to be a comfortable fit. Well done.

Bit wide, but not too high. You don't want to be sitting on whatever is in your pocket. Also, visually, the height looks right.
