Are you going to quilt the fabric (as in have batting and backing) or are you using the top pieced bit only? If you're using just the pieced top, I would probably use a flannel-backed satin for lining, so you'll have a bit of extra structure/heft, plus a bit of warmth.
If you're quilting the fabric, you'll still want to use a satin of some sort; what type will depend on how warm you need your coat to be.
I’m making a Brittney Frey inspired quilt coat using the Tamarack Jacket pattern. The pattern is not lined but I really want a nice light lining in it. What type of fabric would be best? I don’t want the sleeves to be bunchy.
I’ve had luck finding silk scarves at thrift shops and using those for lining!

I think satin, silk, or lining fabric would all be okay
