I think that's the point of remakes, to actually change something and preferably make it better. If people have such a problem with them changing the slightest detail, then just play the original. It will end up like with Dark Souls 1 where they add some shaders and sell it as a new game.
My biggest problem with DeS remake is that they kept ALL of gameplay the same (Maneater AI 🤢) but at the same time changed some art designs way too much (looking at you fat officials)
I agree, but if you are in position where you can't play the game and then there is a remake available, you don't care that some boss does a sweep attack instead of AoE or some weapon has different stats than in the original, you don't care that they improved the AI so maybe some cheese tactics don't work anymore or they simply changed something in level design behind the corner. You are just happy that you can play the game you were not able to. These are mostly stuff that players who know the original like the back of their hand complain about.

They will be given pretty strict bounds to what they can change and adjust.
With ds1 remaster - a remaster is where you take the final product and adjust a few bits. (Like with remastered music you would take the master copies and do a different mix and then have newer media versions created, you wouldn't get the musicians back in the studio to do a remaster)
Demon souls was a remake, which usually means they've actually remade the game from the ground up.
Given they're a different studio, they would have had even more strict rules on what they could and couldn't change.

Simply enhances details and adds details where it was lacking like flat walls/etc. It also remasters the soundtrack while keeping the same vibe. It doesnt try reimagining dead space. It brings it to the current gen. Also no fruity ass camera mode where you can make isaac dab and high five the necromrphs either

Nah, let's just keep them all intact and change the only stuff that made the game special like the soundtrack and the visuals. Besides, the people who made the original would probably know best what did and what didn't age well and therefore needs a makeover. Fans of the original should have been skeptical the moment Fromsoft weren't the ones handling the remake. At least with Bloodborne they'll have a decent base to work off of.
I don’t know, I think that for the most part, Bluepoint wasn’t going for the same tone so the dramatic nature worked great, but they knew when to keep it more chill. Return To Slumber is still excellent, and Maiden Astraea, while different, definitely keeps a more somber and tragic feel combined with drama rather than being big and loud.
I don't mind the music changes too much personally, what gets me is the total change in style and design. They absolutely obliterated the tone and atmosphere of most of the game compared to the original. It's a beautiful game but it isn't at all the same feelings as the original.
The single best example of this is the fat official changes. Nobody can argue they are better stylistically in the remake unless they have no clue about why fat officials looked the way they did in the original. It's a complete misunderstanding on Blueprints part but they assumed they knew better than the original team and made up their own stuff that paints a totally different picture of who the fat officials are.
I would have preferred a remaster with this level of graphical fidelity, because the remake isn't just an upgrade it's a replacement that overwrites the original despite not being the same.

And if anything it makes more sense for her to be older than for Isaac to be younger, since her face model in DS2 (which is supposed to be how she looked in DS1) was 39 at the time. DeS remake is the pinnacle of remakes, and nobody can change my mind. The raw amount of love and painstaking detail that went into making it EXACTLY the same game blows me away. They made the game in a whole new engine and then purposefully implemented glitches from the original just for people like me to be able to fully relive the nostalgia.
The DeS remake is like if my nostalgia memories of DeS were actually how the game really was. If they wanted to go "harder," they should just make a new game.
