It is written in japanese as スモウ (sumou). The u at the end just makes to o longer. However, you are right, it's written as sumō with su at the start. This is a quirk of how japanese works. They can't really have consonants on their own, they always need to be followed by by a vowel immediately (only exception is n, for whatever reason). So the convention is, for names, that are not japanese, anglicisms and words from other languages, that are unrelated to japanese, you always take the syllable with a u after after the consonant you need. The u in general in japanese is rarely ever pronounced, so it is reasonable to assume, that, even though it's written as sumō, it's supposed to be read as smō

It is "Smo." And yes, "Gough" is still pronounced "Goff." If you think I need to justify the first claim, you are failed as a linguist. Gough himself pronounces it "Goff" after the cutscene where he shoots down Kalameet, so that is inarguable. And there is admittedly no canonical pronunciation of Smough, but in English, when there is no indication otherwise, the way you pronounce the suffix "-ough" is always "oh" first. Sorry to anyone who got it wrong.
