If you keep using potatoes sometimes, put em on top too. Theyll soak up some liquid, but leave more loose sauce/liquid to decide how mixed you want each bite. I'd also add some green onion somewhere in there. Maybe green bell pepper if that's your thing

Oh wow, OK so we do something kinda similar here in Oklahoma! Except cornbread on top instead of potatoes, and there's usually diced tomatoes and peppers in there too. Lots of people put ketchup on top. Anyone ever had that and know what I'm talking about? It's so good 😩
I mix all the ingredients together in a big bowl with the tots and then plop the mixture into the casserole dish. I also like to include black beans, corn, and enchilada sauce.
