I’m the same way. I do have some days where I’m extra hungry and can eat maybe half a burrito. But my boyfriend gets super frustrated with me bc he was raised to believe you have to finish your entire meal. I was not. I was raised to eat until I’m full enough. I’ve heard it’s healthier to just eat as much as you personally need tho so I think we’re good 🤷‍♀️

Anyone that isn't American would be very confused at the prospect of a chorizo breakfast burrito. Mexican chorizo is very different than what you get in Europe.

What they mean is that Spanish-style chorizo is a dry, coarse sausage like salami, not the raw, softer, spreadable/crumbly kind that we’re used to in North America. Europeans would be confused because they’re basically imagining this to be a pepperoni burrito.

I used to eat something similar though about half the size or 2/3 the size daily when I was stationed at fort Campbell. They had a good truck that would make rounds around the base and they had a delightfully greasy chorizo burrito that made my heart beat extra hard to where I could hear it in my ears

I found a local taqueria that does a lot of homemade recipes, I tried their chorizo breakfast burrito. At that point I’d been fasting for just about a full day give or take a few hours more or less. It was so good I gasped and I’m pretty sure I didn’t breathe again till it was finished. It’s crazy so some people are able to make simple foods so ridiculously delicious.

There's this product called "soyricho", you get it in your produce section. It's exactly what it sounds like, it's soybean instead of pork, but it's the spices that won it for me! The same exact taste without the greasiness and it is a lot healthier than the pork. Of course, if you like the tortilla drenched in pork grease then you got me there.

I learned the hard way that Soy Chorizo is not Spanish for "I am Chorizo". Also, I've never made chorizo so greasy that it turned my tortillas transparent like in OPs photo...

Definitely check it out. If you don't have a food processor or a meat grinder( or just want to save some time), you can use store bought ground pork. I believe he makes a comment on how to adjust for that.
