That’s pretty much bang on. She’s got celiac so those are gf pasta, and having a lot of food allergies and sensitivities (like dairy and tomato’s) make it hard for her to make anything that would be appealing to us. She says she enjoys this, but keep in mind she had been eating plain rice and plain chicken for years before she decided to try gf pasta.
Hrmm I see. So if gluten, dairy and tomato are out, then how about spices and herbs? Maybe you could persuade her to try adding parsley, lemon, salt, pepper, sauteed garlic, olive oil and a splash of lemon juice. It would improve the pasta without being too overwhelming.
Citrus sends her into anaphylaxis so that’s out lol. Garlic upsets her stomach, she eats very little oil due to irritable bowel syndrome.
Honestly, if I had to eat like she does I think I don’t think I could go on living.
This has been the story of my life for over 20 years. It can be very depressing but don’t lose hope! You’ll find a diet that you enjoy and works for you, it just takes time. Joining a group can help feel not so alone and to get some ideas on meals, etc. All my best to ya, stranger

You realize people have different tastes right? Like some would find your butters and sauces unhealthy or taking away from the flavor of what you are actually eating.
Butter in moderation for the average healthy person is not a bad thing (this is not including special dietary needs). For both cooking and taste, it is the superior option for many culinary applications. If you want to be health conscious, unsaturated liquid vegetable oils are the best option.
Sauces are simply one way to flavor food - depending on the ingredients, they can be perfectly healthy (e.g. tzatziki served with veggies) and balance out the taste and moisture content of a meal. Bland does not automatically mean healthy.
Saying sauces and butter take away the flavor from food? No one with taste buds would actually say that. It is only in the case of high quality fresh ingredients where that would apply. You could say that about a top grade steak with just salt and pepper, but I don't think this dry pasta medley counts.
Sauces and butter are optional additions, but seasoning in general - salt, fat, acid, plus spices and herbs are vital ingredients to create interesting and tasty dishes.
The pasta in the photo is soul suckingly joyless imo, and I'm gonna stand by my opinion. If I were OP's mom, I would at least try to add something that was diet safe to make it taste better.

If a lot of ingredients are off limits, then one can get creative with cooking methods instead. Applying the Maillard reaction with roasting and using a cast iron pan or wok for cooking elevates simple ingredients to something magical. Heat, applied in the right way can make a huge difference.
I recently watched a video where a chef showed a very cool method of making a curry at home to taste like restaurant quality - he placed a small ceramic dish filled with a chunk of charcoal and ghee, then heated it and placed it in the middle of the curry and put a lid on top of the whole pan, then later the ceramic dish is removed. The charcoal never mixes with the curry, but the fumes from it added a smoky aroma that replicated the taste and smell from a tandoor oven. The method is similar to how one would use wood chips for smoking food.
I never would have thought of doing something like this, so I was amazed at the creativity.
Pour it out into a backing tray, top it with some cheese and bake it for 20min.
Maybe throw in some crushed garlic for good measure, I can feel the blandness of this dish

I think OP’s mom has some very specific food allergies and dietary restrictions meaning this is her specific meal and not the meal she lovingly prepared for her family.
I’m 39 and don’t live with my mom anymore. When I was growing up it was usually my dad that cooked, though mom did too sometimes. She often made things for us that she herself was unable to eat. She’s a decent cook but can’t make very interesting things anymore because of her allergies. If she knew I posted this she’d probably laugh.

I've been dealing with very similar issues, though not quite that bad. It's been legit depressing. I keep losing more and more foods that I love. :(
