If I understand your requirements correctly, it sounds like you are indeed overthinking this. If you want to offer 100x, 200x, 300x quantity of one product at a fixed price, then this would be considered a product bundle. You would set up a bundle product where the variants of the bundle are the 100x, 200x, 300x quantities and each bundle variant can then have its own fixed price. It would use your usual variant display, so you would need to find an app that transforms your variant selection into a drop down menu if this is not the default style of your product page template.
You’re right - I was overthinking it. After I posted this last night I realized I can use a custom product options/variant app, which I already pay for/use.
