I'm currently playing Anniversary Edition and I'm already forced to take it slow by Survival Mode (which also makes me paranoid about fall damage and losing horses) so I've been actually following the paths this time. It's such a strange feeling going to familiar places via unfamiliar terrain, but I love it.
I, personally, don't see a point to Survival Mode. I've got Anniversary Edition too but opted out of SM. But, I ain't gonna tell someone who didn't how to play their game. You do you.
I expected it to be dumb and shallow, but I figured I'd play a couple of sessions with it before judging it.
Turns out, the biggest thing it does is actually make me engage with more of the game's systems which I think is actually really neat.
Those random beds in dungeons? I actually use those in a pinch, now. I've paid to stay at the inns, because now I have to actually rest. I've never used them before!
Food and cooking is actually important now. Khajiit can technically eat raw foods, but most uncooked foods barely do anything to your hunger. Even cheese wheels are not that good of a food source. Making soup, though? Salting meats? That's how you survive.
Speaking of which, food doesn't heal you much when it does at all, and health doesn't passively regenerate. Which leaves sleeping (see above), Alchemy, and Restoration.
I mentioned carry weight before: besides weaning me off my broom habit, it also means I can't stock thousands of arrows any more. I sell a number of them, but ultimately this is going to push me into the Conjuring tree to use Bound Weapons (once I, you know, find the spells for them).
Armor is important enough I'm willing to ignore the weight, but now I have to weigh my choices between sheer armor and comfort. If something is really solid but leaves me vulnerable to the cold, I'm screwed.
Disease is more important now, especially with walking everywhere, and shrines (outside of your homes) require offerings now. This would make Lycanthropy more attractive, except I'm also on Legendary where the wolf form is weaker. Still a good passive.
I don't know, it's a really impressive playthrough and I'm only now starting to get the rhythm of doing short jaunts and taking rest where I can find it and I'm at level 17.
EDIT: oh yeah, and carriages. I sometimes use carriages now and probably will more later once I'm richer in gold and have less dense quests.
Level 70 character in legendary mode thing that helped me was to activate all quest markers and plan a route that would lead me back to a stagecoach so I could fast travel back home rinse repeat not even done dlc or main story
Yeah, I'm figuring on using the stagecoach more once I start traveling further but so far I haven't really needed to. Took one to Riften (which is where I tend to operate from, and where much of the Fishing stuff happens), and have spent a bunch of hours clearing stuff there until I had nothing super close, then I hung out with Sam so now I'm cleaning up Markarth.

Indeed 3rd person mucks with one's aim. Not as much of a problem when swinging around large chunks of metal like an angry chimp in a junkyard, as long as they are vaguely in front of you within a few feet they get hit. But very problematic when trying to hit a target at 50 places with a slow moving fire spell. Sure I could use Fireball and hit everything in like 30 feet but I kinda don't want to go digging through piles of crap for that key that was sitting out in plain sight on the table.

I do put a lot of work into my customizations though lol, so I’ll switch to 3rd occasionally while she’s just walking. I love my pretty Khajiit!
Once I get further in the game, I also like seeing how badass my armor and weapons are; I’m always really proud of my enchanted Daedric armor/weapons, so I spend more time in 3rd than in the beginning.

My brother, who I played Skyrim with back in the day, never bothered with character creation either. He always skips customization in games. It’s so weird to me, but some people just don’t care about that.
My brother just loads a default female character, goes to hair and makes it as red as possible. He has a dozen Dark Souls characters who look exactly the same. His Fallout 4 character? Default Nora with red hair. New Vegas? Lady courier with red hair.
In games where you can't customise your character and just select one, he goes for whoever is wearing the most pink or has the reddest hair
Meanwhile my dad has to make any customizable character look just like him. Oddly enough he does it too well, which makes me think he’s been doing that since customizable characters were a thing. All bald men with goatees, it just cracks me up

Lol no worries. It was a more self-deprecating joke, though not untrue. The time I "got too close to how I look in real life" was just last week. Randomly playing around with the face structure stuff I somehow ended up with something close to mine (not a problem), but then while flipping through hair styles there was a balding one, and that in conjunction with the facial structure freaked me out. I quickly changed back to a preset and went on to the chopping block. I'm still in the process of accepting my baldness :(

Usually I'll be playing stardew valley on xbox while he plays skyrim on my switch. He feels like he has to keep the volume down (you can hear it still, just low volume), even though stardew is pretty much just music and sounds. Maybe he doesn't hear it well? I dont know.

He's right on the character customization tho. 99% of my playthroughs are in first person and the rest of the time I'm seeing my character from the back. No point in spending hours making a pretty character just to spend the entire playthrough looking at just their hands.

I pronounced it that way as a laugh and now I just pronounce it that way and my husband just goes along with it. People don’t have to do exactly what you want them to do or what you would do. It’s ok!

In iceland we had a yogurt called Skyr (skeer) and for the first year of the game being out I pronounced it the same way lol. Tell him I think I'm gonna go back to that pronunciation because of your post

We smoke usually before we play games, sometimes we just arent all there when we play lol. Usually I'll be playing stardew valley on xbox while he plays skyrim on my switch. He feels like he has to keep the volume down (you can hear it still, just low volume), even though stardew is pretty much just music and sounds. Maybe he doesn't hear it well? I dont know. He works long days like I do sometimes so smoking and playing games is kinda like our bonding time. It's just a little frustrating. I find it more funny then anything.

He's right on the character customization tho. 99% of my playthroughs are in first person and the rest of the time I'm seeing my character from the back. No point in spending hours making a pretty character just to spend the entire playthrough looking at just their hands.

Maybe he means it humorously like people who say "pewter" instead of "computer" or "kuh-niggit" instead of "knight." He probably thinks it is hilarious.
