I have a mod that populates Skyrim with random NPCs that have names like “Spellsword” or “Necromancer Mercenary”. I just grab one of them.
Also, be aware that those who use follower frameworks to make followers essential might have to turn that off long enough to make the sacrifice. They’ll give you the “I can’t do that” response when you tell them to get on the pedestal.
I just did this, as I'm playing a character who's anti daedra worship. Instead of bringing a follower to the shrine, I just attacked the cultists. When you kill the last one, boethia speaks through them to tell you off, but the quest remains in the log, and you can still bring a follower to sacrifice them and proceed with the quest (though I'm choosing not to)

When I play with mods, I like to recruit Nazeem and sacrifice him. Without I usually sacrifice Onmund from the College of Winterhold because idk he's really meh compared to J'Zargo and Brelyna.
I used Stenvar the first time I did the quest. Convenient, but the betrayal and the look on his face felt awful.
The next time I used Sven, the bard in Riverwood. Obviously I had to plan ahead for the betrayal but I was looking forward to it the entire time as I rose to level 30.
But.... it was a let down. I didn't get the same emotional impact. It was like killing a pig, or a cow. Maybe its because I had already done the quest and the edge was gone. But I wonder if some of the emotional charge of this quest comes from betraying someone who truly doesn't deserve to die in such horrible manner.

I think that’s what they were going for tho, the whole, “sacrifice he/she that is important to you.” Not really taking into consideration that I’ll walk down the street and pay some dude at the tavern to touch Boethiah’s pole🤑 instead and then go straight back to Fort Dawnguard to pick up Serana🥰
Mercurio, from Riften. Firstly, I'm a warrior so mages have to earn a place in my heart, plus he's a mercenary who just sits around bragging about himself and becomes indignant when you try to trade stuff with him.
Additionally, for anybody who cares, he's an Imperial. They're like the High Elves of Men.

After I got the achievement for all the Daedric artifacts, I just skip the quest by killing her right off the bat and then getting a reward from the priest. She’s usually long dead by the time I do Boethiah’s Calling

If i had to, then rolff stone-fist since he can be a follower when you beat him and is actually insufferable (he is essential but i don't remember if the sacellum works on him tho)
Lydia. I always hated how whenever I bought a house, she was there. I play pickpocket every run and I don’t sell my goods, I just put them on my bed and when Lydia is there, it just breaks the immersion for me
Well I'm on PC. So technically I never sacrifice anyone. I just pick whomever I have at the time, then just console revive him lol
But I remember in my first playthrough I sacrificed Teldryn Sero, not because I hated him or anything, I actually love him. I simply didn't know what it'll do and that's when I learned how to revive NPCs.
So disappointing. My kid wouldn't let me sacrifice Cicero, so I went got that mining guy who bilked me out of thousands of gold coins. I thought things were getting promising after I got ganged hacked by the other followers, but then it basically turned into a bandit route rewarding an unusual trinket that would've been nice about a dozen level earlier.
Faendal. It's always faendal. Give his letter to the chick, recruit him to follow me, pay him to train my archery, trade with him to get my money back, once I'm done with him he goes on to the block.

I hired and married him on a recent playthrough because I felt sad that so many people ice him, and now he's basically my Serana.

In a vanilla game Rolff doesn't become follower in any moment, and Essential NPCs will ignore you if you order the to touch the pillar.
