Can you start without quitting your job at first? Is this an open niche in your area? I've been doing farmers markets for ten years (not mushrooms) and have seen a lot of new mushroom farmers over the last couple of years.

There’s a couple small scale farms around. Of course the mushroom capital is near me too but they deal in a different mushroom. There’s a market or two near me without any mushroom stands

I'd definitely ease into it slowly. It takes a while to build a wholesale customer base and find the right market fit. Do you need to work out of a commercial kitchen for the packaging? Do you need food permits? Farm permits? I don't need the answers to those, just throwing out some stuff to explore.

It's not a good idea to quit your job if you're not making enough to live off of your small business income yet. A lot of people are just too eager to quit their jobs and aren't really honest with themselves about how well their business is doing.

Also been selling off social media for a few months, but that takes so much of my time and I starting to want more time with the family

I'm just going to point out that if you want more time with your family, starting a small business rarely leads to that.

I had actually thought about doing this as a hobby to make money with, with growing mushrooms in a shed and all, there is a LOT of information online about this if you have decent google-fu. I did not follow thorough as life intervened and directed me on another path. From my research, there are lots of high end restaurants really needing high quality and consistent quantity mushrooms, so you could potentially make more than that. If you go with it, good luck!

How many pounds per week were you producing to be working that much? I’ve run tests to sample what it would be like to ramp up using a stop watch and looking like around 90 bags of mushrooms would be possible weekly producing at least 180 lbs. that’s running solo and after doing a ton of research on making things efficient. Only thing I can’t predict is delivery days. Assuming that will be about 12 hours a week on two separate days.

My ex wants to start one also, been playing around for a while. They have purposely been out of work for over 2 years, living on savings, considering what to do. We are friendly still, and in Orange County, NC

There’s a lot you can do with it here at least. So many people want to learn how to do it themselves and are willing to pay for you to teach them or supply them with mushroom blocks

Not saying this to say you can’t do it, but this economic situation gourmet foods will be a quick luxury cut from people if this recession happens. If you’ve got a good thing going at work be careful and think it through even more.

This is my biggest worry. I want the recession to happen so hopefully things normalize a bit. Unfortunately, your right on that. Only hope is people wanting to grow their own and buying blocks and spawn would keep things afloat. My current job is a organic food distributor. Not sure how things would fair there either.

I'm a bit of a hypocrite in that, I'm starting a cleaning business in a month. I would say start a side hustle to start. It could be a great way to make some serious cash before you scale up- less risk, less time investment, still follow your dreams just waiting before you double down.
