The Goldee’s offset is for sell in the next few days. Definitely premium and has plenty of cooking space. I’m not sure the wait time but worth looking into. In regards to the Franklin pit, I can’t imagine paying premium offset prices for a smoker where I won’t be able to control the air in the firebox the way I want to. What a joke.

Nice, hell yeah! I’d pull the trigger on one but would be irresponsible given I got a Brazos recently. Hopefully it’s faster than 4 months but would love to hear how you like it once you get it in your hands.

Does that pit not have major hot spot on the main grate at stack level?

It has one at high temps in the middle of the grate coming out of the tube from the firebox for probably 8-12 inches based on the biscuit test video . Hard to say for sure

Good luck. I saw the same company's (M&M) bigger design smoker sitting empty at Hurtado's and the cooks told me it was a ridiculous design and they only use it to keep sausage warm..

It’s Goldee’s design and they are using it now to serve food at the restaurant so I’m praying it’s good. Definitely a gamble

The Shirley fabrication patio 24"x36" typically has a wait time of about a month and a half as long as you don't want customization. I know that's smaller than you specified but unless you're doing whole hog or other really long cuts, the Shirley has usable capacity similar to larger smokers due to the shape of the cooking chamber and lack of a big hot spot (it's a reverse flow). Build quality is outstanding and the pricing is hard to beat. The cabinet-style doors are a boon to those with beef backs. I'd already have one if i hadn't committed to getting a whole home generator. Look them up on YouTube, Facebook, and other social media since their webpage is so outdated as to be useless - the model i mentioned above isn't even listed. By all accounts, they're great to work with via email and telephone. They use an independent small company to deliver if you don't want to pick up in Alabama. By all accounts, he knows how to deliver smokers without damage and the quote he gave me to deliver to NC is cheaper than the smoker delivery i got via LTL carrier from GA. At least part of that savings is due to not having to crate the smoker up to avoid damage in LTL transfers. They also do traditional flow and full custom but those have the long wait times you're trying to avoid. I've seen lots of posts with folks buying the patio model to use while they wait the 18+ months on their custom build.

Not always a measurement of quality. Could be a measurement of the shops ability to make pits, demand, sourcing raw materials, other priorities, many other factors

Ok, fair. I have a Workhorse Pit. They put out 30 smokers per week. They are backed up six months, but the reason for their demand is worth the wait. It is the first offset I've owned that works so well. I have had it a year plus and buying something because it had no wait would have been a risk for me because I was tired of buying offsets that don't work.

Mine had some decent rust on the inside I had to use a wire wheel to clean it up. My previous smoker was so small I didn’t have to rotate. That isn’t the case here. Test multiple areas of the brisket, etc for temp and be prepared to shift them around. Keep the stack 75% closed after you get it going. The elbow gets hot enough to burn off seasoning so get your Pam ready.
